Testing it with one item, the starting price was £0.99. I entered a snipe bid of £6.99. Since then there has been one bid of £10.50.

The current bid column shows the original £0.99, but does show that there has been a bid. Refreshing does not make any difference.

You have to click "Refresh" button which is located on the Snipe screen.
Also, please note that the current bid does not affect the actual sniping anyway.
